On those nights when I have nothing planned for dinner and nothing sounds good here’s a winner dinner every time:

Quick Couple o’Cans Chicken Nachos

1 can white chunk chicken

1 can black beans

1 can whole corn

1 can black olives

tortilla strips/chips

shredded cheese

Drain chicken, beans, corn and mix together in the strainer. 

Line cookie sheet with foil. Layer 1/2 of the chips, cheese, and chicken mixture. Add another layer. Bake at 350 for 20 minutes. Top with tomatoes & sour cream.
