Adapted from Adam and Joanne Gallagher at http://www.inspiredtaste.net/9928/baked-oatmeal-with-strawberries-banana-and-chocolate-recipe/ (Original recipe source:Super Natural Every Day, written by Heidi Swanson)

Ingredients

2 cups old fashioned rolled oats

1/3 cup light brown sugar

1 teaspoon baking powder

1 tablespoon grated orange zest

1 teaspoon cinnamon

1/2 teaspoon salt

1 cup semi-sweet chocolate chips

1 cups milk

1 large egg

3 tablespoons butter, melted

2 teaspoons vanilla extract

Method

Preheat oven to 375°F and generously spray the inside of a 10-1/2 by 7 inch baking dish (I used a mini loaf pan) with cooking spray and place on a baking sheet.

In a large bowl, mix together the oats, sugar, baking powder, cinnamon, salt, and half the chocolate. (Save the other half of chocolate for the top of the oatmeal). In another large bowl, whisk together the milk, egg, butter and vanilla extract.

Add the oat mixture to prepared baking dish.

Bake 35 to 40 minutes or until the top is nicely golden brown and the milk mixture has set. For an extra tasty top, sprinkle a tablespoon or so of extra brown sugar on top then place back in the oven under the broiler and broil for 20-30 seconds. Serve warm with an extra sprinkle of sugar or drizzle of maple syrup.

I’ve read and watched...

Trayvon Matrin vs George Zimmerman:

I’ve read and watched several accounts on both sides of the argument and the latest is from Zimmerman supporters saying Martin jumped him before Zimmerman shot him. There has been debate about exactly who cried for help right before the gunshot circulating. I’ve also seen people complaining that mainstream media is using old photos of Trayvon in efforts of making him look more innocent and using Zimmerman’s orange jumpsuit photo to make him look more menacing.

I’m starting with the least relevant of these issues. I’ve searched for current photos of Trayvon and found the one above on facebook & found a nice photo of George. So, there is Zimmerman, looking sharp in his suit & Martin, in a hat (not a hoodie), taken in dark lighting… take a good look. Does it make a difference to you? It does not matter to me.

The fact is Zimmerman saw this young man (just barely 17 years old) and decided he was “suspicious”. Is Zimmerman racist? Only he knows for sure. Did he make racial slurs on the 911 call? Perhaps… Whatever caused Zimmerman to come to his conclusion that Martin “looks like he’s up to no good, or he’s on drugs, or something” is irrelevant. What is relevant is that Zimmerman followed Martin for several minutes (against the express recommendation of the 911 dispatcher). What is relevant is that Zimmerman & Martin came face to face as a result of Zimmerman’s unwillingness to heed the advise of the 911 dispatcher.

So that brings us to the issues of who jumped who & who was heard crying for help just before the gun went off. Playing devils advocate, lets say Martin jumped Zimmerman… in a fight or flight situation what would you do? Stand up for yourself or run? Martin may have decided to confront Zimmerman and a fight may have ensued. Martin could very well have thrown the first punch and perhaps it was Zimmerman crying out for help but does that warrant a death sentence? Zimmerman knew the police were on their way… he summoned them. Why not wait and allow the authorities to do their job?

The bottom line is, Trayvon Martin would still be alive if George Zimmerman had followed the instructions given to him by the dispatcher. There never would have been any physical altercation had Zimmerman backed off when told. Period.

Zimmerman is guilty of shooting down an unarmed, 17 year old young man. Zimmerman is guilty of vigilantism. Zimmerman is possibly guilty of obstruction of justice. George Zimmerman must be arrested and brought to justice. NOW!

My heart breaks for Trayvon Martin’s family and friends. Nothing can be done to bring back Trayvon but justice MUST be served!

On those nights when I have nothing planned for dinner and...

"MOM?!

What's for dinner?!"

On those nights when I have nothing planned for dinner and nothing sounds good here’s a winner dinner every time:

Quick Couple o’Cans Chicken Nachos

1 can white chunk chicken

1 can black beans

1 can whole corn

1 can black olives

tortilla strips/chips

shredded cheese

Drain chicken, beans, corn and mix together in the strainer.

Line cookie sheet with foil. Layer 1/2 of the chips, cheese, and chicken mixture. Add another layer. Bake at 350 for 20 minutes. Top with tomatoes & sour cream.

Long week from h-e-double hockey sticks...

Starting Monday with a migraine & my car breaking down and ending Friday with me breaking down (not my finest hours) but it did give me a chance to see who would be there for me when I was down. Tuesday, a friend picked me up for work & another friend loaned me a vehicle to use for the rest of the week. Friday, I returned my friends vehicle & My aunt toke the kids & I to run some errands, out to dinner & back home. One of the errands was to take Mitchell to buy a new tablet with his Christmas/bday money and so Saturday we spent the morning getting it up and running (he loves it). then last night the kids & I went over to Bobby & Michele’s for dinner & fun times. Bobby taught Lani how to make a duct tape bag:

And Mitchell had a ton of fun playing the Wii & nearly being licked to death by Luke (Michele & Bobby’s dachshund):

I am still without my car but thanks to the generosity of friends & my aunt Sheri I am not stranded & I made it through the week & even ended it on a high note. I am so grateful to my friends and family for helping me to keep my head from exploding & for being so supportive. I am blessed!

I'm just here for the food...

Am I a blogger? Well, based on the fact that I began this blog over a week ago & have nothing to show for it, maybe not. I ask myself, what do I have to say that would be of interest to anyone else? Well, probably not a lot but even if I’m the only one that’s interested I figure it’s a good way to keep a record of where my heads at so here goes…

I suppose I should start with an introduction of sorts so here are my stats:

I am a mother of 2 amazing kids (Lani - 12 & Mitchell - 10) who are my reason for breathing and for whom I would do next to anything for (yes, there are limits but I’m hoping I will never have to reach them).

I am 40 years old.

I work in the front office of a community medical clinic in Eugene, Oregon.

I hate to clean but like to cook.

I love to sing, read, spend time with my kids, family & friends & occasionally knit.

I am passionate & opinionated about issues that can sometimes make people uncomfortable (politics, religion, sexuality to name a few) but I have an open mind & am willing to listen to all sides of an argument before telling you why my opinion is most right ;-)

So that’s the back story in a nutshell. Here’s what’s up so far today…

For breakfast, I started with a yummy tomato & caramelized onion bagel. It was delish (but should have used more tomato slices & the whole onion )(http://pinterest.com/pin/252623860317867930/)

After breakfast (and in between laundry & cleaning) I read an amazing blog by a gentleman named Raymond Vasvari http://raymondvasvari.wordpress.com/2012/03/10/limbaugh-and-sluts/?blogsub=confirming#subscribe-blog

This stirred up my feminist juices so the next thing I know I’m spending an hour watching Up w/Chris Hayes http://www.msnbc.msn.com/id/21134540/vp/46690928#46691035

both the segment on Rush & then the segment entitled “Women Fight Back”. How is it that we have come so far and yet are still having these conversations? There are so many outdated issues that are still needing resolution it boggles my mind! My hope is that they will be resolved before my kids are adults & they will only be lessons for future generations to hear about in history books!

So that’s where I am so far today… not sure if I’ll be an avid blogger but only time will tell…

Until the next time, be well & keep your mind open! ;-)

If my 4 month old niece can blog, so can I! ;-)

If my 4 month old niece can blog, so can I! ;-)
